Three tantalising tea mocktail recipes for summer

Cool down in the summer heat with these three delicious mocktail recipes, making clever use of three different Pukka Herbs blends. Perfect for sipping at a summer party, or to unwind with after a long, hot day.

Mint Matcha "Mojito" 

Serves 2

What you'll need:

  • sachets Mint Matcha Green tea
  • 1 ½ cups boiling water
  • A few sprigs of mint
  • Juice of 1 lime
  • 1 tbsp coconut sugar (or other sweetener of choice)
  • Sparkling water

How to make:

  1. Cover the tea bags with 1 ½ cups of boiling water and brew in a covered container.
  2. Strain after 30 minutes.
  3. Cover and cool in the fridge for 2 hours.
  4. Muddle the mint and coconut sugar together.
  5. When ready to serve, add the juice of one squeezed lime, muddled mint leaves and coconut sugar, and chilled Pukka Mint Matcha to a cocktail shaker.
  6. Shake until thoroughly combined.
  7. Pour over two tumblers of crushed ice.
  8. Stir then top with sparkling water.

Melon, Lemon, And Lavender After Dinner "Daquiri"

Serves 2

What you'll need:

  • 3 sachets After Dinner tea 
  • 1 ½ cups boiling water
  • ¼ of one small honeydew melon
  • 1 tablespoon dried lavender
  • Juice and zest of 1 lemon
  • 1 tablespoon honey

How to make:

  1. Cover the tea bags with 1 ½ cups of boiling water and brew in a covered container.
  2. Strain after 30 minutes.
  3. Cover and cool in the fridge for 2 hours.
  4. When the tea is chilled, put in a blender and blend with the honeydew melon, lemon juice, honey and most of the lavender.
  5. Pour into two glasses and sprinkle finely zested lemon and dried lavender on top to serve.

Watermelon Fennel “Frosé”

 

Serves 1

What you'll need:

  • 1 Cup chopped watermelon
  • 2 cups ice
  • 175ml Pukka Herbs Three Fennel, cooled
  • 1 1/2 tablespoons rosewater
  • 1 1/2  tablespoons coconut sugar (or other sweetener of choice)
  • Lime wedges, to serve.

How to make:

  1. Steep one bag of Three Fennel tea in 175ml of boiling water for 5 minutes, then leave to cool.
  2. Add all ingredients to a blender and blend until thoroughly combined and ice is broken down.
  3. Pour over ice cubes in a glass and top with fresh watermelon slices and lime.
